My job would be a lot easier if every product that came into our kitchen was as wonderful and readily available as Jamison lamb. There are very few ingredients that we work with on a regular basis that we know will be perfect 100% of the time.
This coming Sunday, the Jamsions will be joining us to talk about their farm at our special spring dinner. It is the fourth special dinner we have had with them, and it is always a great time. In addition to their wonderful lamb, we will also be serving our first ever attempt at cured ham and the first (for us) wild King salmon of the season. The menu is subject to change based on availability of ingredients, but it should look very close to this:
Dandelion Greens with Country Ham, Poached Egg, and Mustard Vinaigrette
Wild King Salmon with Lentils, Red Wine, and Over-Wintered Parsnips
Jamison Lamb Three Ways with Crispy Farro, Ricotta, Dried Corn and Ramps
Shaker Meyer Lemon Pie
$60 per person, includes corkage and coffee.
